Colombian Avocado Salad

This salad always makes me smile and makes me feel so nostalgic because it is a recipe that you will see in EVERY Colombian house. It goes well with any dish, whether it’s steak, fish or chicken it will be the perfect refreshing and citrusy side to have your guest wanting more. My favorite part about it is how easy it is to make it.

Ingredients

  • 3 Avocados

  • 4-5 medium Tomatoes

  • 1/2 a Purple Onion (thinly sliced)

  • 1 Lemon

  • 2 tbsp of Olive Oil

  • Salt & Pepper to taste

Recipe

  1. In a bowl cut the avocado and tomatoes into thick cubes, the whole point of this salad is to really taste the chunkiness of both. Make sure not to cut them really small because we don’t want it to turn into guacamole.

  2. Cut into think pieces half of a purple onion. This is the only part we don’t want chunky.

  3. Squeeze a lemon into the salad

  4. add 2 tbsps of Olive Oil or more if you feel like you want to taste the flavor more

  5. Season with salt & pepper to your liking

  6. Mix it all around gently making sure not to break up the avocado so it doesn’t turn into Guacamole

  7. Serve it with your favorite main dish and enjoy!
