Colombian Carne Guisada

Carne guisada is one of those dishes that many Latin countries have and they all have their own spin to it. This one is my moms recipe with a few changes I made and it’s a savory, comforting beef stew that’s rich in flavor and perfect for a satisfying meal. This dish features tender top sirloin simmered with a blend of spices, fresh vegetables, and aromatic herbs. It's a staple in Colombian cuisine and is sure to warm you up on a cool day. Here’s how to make this delicious stew at home.

Ingredients:

  • 1.5 lbs top sirloin, cut into bite-sized cubes

  • For the seasonings below you want to make sure the meat is full of the seasonings if you need to add more GO FOR IT! 

  • 1 tablespoon Goya Adobo seasoning

  • 1 tbsp garlic powder 

  • 1 tbsp black pepper

  • 1 tsp salt

  • 1 tbsp smoked paprika

  • 1 large white onion, chopped

  • 4 tomatoes, chopped

  • 6  cloves garlic, minced

  • 2 red potatoes, cut into 4

  • 1 cup of water

  • 1 tablespoon Knorr beef bouillon (or similar)

  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Season and Cook the Beef:

    • Sprinkle the Goya Adobo seasoning, garlic powder, black pepper, salt, and smoked paprika over the beef. Stir well to coat the beef with the spices. In a large pot or Dutch oven, heat a splash of oil over medium-high heat. Add the cubed top sirloin.

  2. Add the Vegetables:

    • Add the chopped onion, tomatoes, minced garlic, and chopped red potatoes to the pot with the beef. Stir well to combine.

  3. Simmer the Stew:

    • Pour in the water  making sure the meat and potatoes is fully covered and add the Knorr beef bouillon, stirring until the bouillon is dissolved.

    • Bring the mixture to a boil on medium high heat and cover it for about 30 minutes

    • Finish Cooking:

    • Mix it around and continue to simmer on medium low heat for another 15-20 minutes, or until the potatoes are tender and the beef is fully cooked. The stew should not be watery it should have thickened and if it’s not thickening add a little more Knorr beef bouillon. Just make sure the stew doesn’t fully dry up.

  4. Garnish and Serve:

    • Taste the stew and adjust the seasoning if necessary. Garnish with fresh chopped cilantro before serving.
