Colombian-Style Breakfast
This is my ultimate Barranquilla breakfast. Now, before everyone freaks out, no this breakfast is not popular in Medellin or Bogota, this is specific to the coast of Colombia and it is one that I absolutely loved and grew up with. Start your day with a hearty and delicious meal that brings together crispy fried plantains, perfectly fried eggs, and a sprinkle of crumbled queso Cotija or queso Costeño . This simple yet flavorful breakfast is a popular choice in many Colombian households, offering a satisfying balance of savory and cheesy flavors. It’s quick to prepare and brings a warm, comforting vibe to your morning routine.
Ingredients:
2 green plantains, peeled and sliced into rounds depending on your thick preference
1-2 cups of olive oil (for frying)
2 eggs
1 tablespoon of butter
Salt and pepper to taste
1/4 cup crumbled queso cotija or queso Costeño
Instructions:
Fry the Plantains:
Heat 1-2 cups of olive oil in a pot over medium heat. Once hot, add the sliced plantains in a single layer, making sure not to overcrowd the pan.
Fry the plantains for about 2-3 minutes on each side, or until they are golden brown and crispy on the outside. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil. Season with a pinch of salt while they’re still warm.
Fry the Eggs:
In a skillet, add 1 tablespoon of butter. Crack the eggs into the skillet, being careful not to break the yolks. Fry the eggs until the whites are set but the yolks are still runny, or to your preferred doneness. Season with salt and pepper to taste.
Assemble the Breakfast:
On a serving plate, arrange the fried plantains and place the fried eggs on top.
Generously sprinkle crumbled queso cotija over the eggs and plantains.
