Patacones
In Colombia we call it Patacones and that's what it is lol. Jk Tostones or Patacones are a popular snack and side dish throughout the Caribbean and Latin America, especially beloved in countries like Colombia, Puerto Rico, and the Dominican Republic. These crispy, twice-fried plantains are savory and satisfying, perfect for dipping or enjoying alongside your favorite meals. I could literally eat these with every meal, with a crunchy exterior and soft interior, tostones are simple to make and bring a delicious taste of the tropics to your table. Follow this easy recipe to make perfect patacones at home!
Ingredients:
2 green plantains (the greener, the better for crispy tostones)
1 cup vegetable oil (for frying)
Salt to taste
Optional: garlic dipping sauce, guacamole, or suero costeño for serving
Instructions:
Prepare the Plantains:
Peel the plantains by cutting off the ends and making a lengthwise slit along the skin. Gently remove the peel, being careful not to break the plantain. Cut the plantains into 1-inch thick slices.
First Fry:
In a large skillet, heat the vegetable oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping in a small piece of plantain; it should sizzle immediately.
Add the plantain slices to the hot oil in a single layer, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until the slices are lightly golden and just tender. Remove the plantains from the oil and place them on a paper towel-lined plate to drain.
Smash the Plantains:
Using a plantain press or the bottom of a glass, flatten each fried plantain slice to about 1/4-inch thickness. Be gentle to avoid breaking them apart.
Second Fry:
Return the flattened plantains to the hot oil and fry again for 2-3 minutes on each side, or until they are golden brown and crispy. Remove from the oil and place on a paper towel-lined plate to drain any excess oil.
Season and Serve:
Immediately sprinkle the tostones with salt while they’re still hot. Serve warm with your favorite dipping sauce, such as garlic sauce, suero costeño, or guacamole.
Tips:
Make sure to use green plantains, as ripe plantains will be too soft and sweet for tostones.
