Erewhon White Bean & Kale Salad
I found this salad at one of my visits to Erewhon and I thought it was soo good and felt like I had to figure out how to make it at home because I dont wanna pay $20 for a little container of this salad when we could make it at home!. This hearty and nutritious white bean & kale salad is a perfect dish for those looking to enjoy a satisfying and healthy meal. Ingredients
1 can (15 oz) cannellini beans, drained and rinsed
4 cups kale, chopped (stems removed)
1 cubed avocado
1 tbsp hemp seeds
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
Salt and pepper, to taste
For the Lemon Vinaigrette:
1/2 cup avocado oil
1 or 1/2 a lemon squeezed (depending on how citrusy you like it)
1 tbsp Dijon mustard
1 tbsp honey (or more depending on if you want it a little sweeter)
Lemon zest, to taste
Salt and pepper, to taste
Instructions
Prepare the Salad Dressing:
In a small bowl or jar, whisk together the avocado oil, fresh lemon juice, Dijon mustard, honey, lemon zest, salt, and pepper. Set aside.
Massage the Kale:
Place the chopped kale in a large bowl. Drizzle a small amount of the prepared lemon vinaigrette over the kale.
Massage the kale with your hands for about 1-2 minutes until it becomes slightly softened and dark green in color. Massaging helps to tenderize the kale and improve its texture.
Assemble the Salad:
Add the drained and rinsed white beans, cubed avocado, hemp seeds, pumpkin seeds and sunflower seeds to the bowl with the kale.
Add the Dressing:
Pour the remaining lemon vinaigrette over the salad ingredients in the bowl.
Toss gently to coat all the ingredients evenly with the dressing.
Season and Garnish:
Season the salad with salt and pepper, to taste.
Serve:
Serve immediately and enjoy the delicious combination of flavors and textures!
Tips:
For extra protein, add grilled chicken, shrimp, or tofu cubes to make it a complete meal.
